The food allergy clinic
How The Paris OIT Program works
The Paris OIT Program is an in-person oral immunotherapy program for selected children and adults with peanut, tree nut, and egg allergy, using carefully measured doses increased in-office under direct medical supervision.

OIT is a structured, long-term treatment
OIT gradually introduces carefully measured amounts of an allergenic food under a specialist’s protocol. It is not a food challenge to try at home, and it does not offer the same outcome or timeline for every person.
According to Dr. Jason C. Paris, MD, the treatment plan starts with a careful evaluation rather than an assumption that OIT is right for every food allergy. For selected patients, the program combines observed in-office escalation with a prescribed daily home dose.
The work happens over months, and daily maintenance may continue for years.
The point is steady, supervised progress—not speed.
THE OIT PROCESS
Your step-by-step OIT journey
The Paris OIT Program follows a defined clinical rhythm, with each step individualized around the patient’s safety, schedule, and treatment goals.
01
Food allergy consultation
We begin with an in-person evaluation of the food allergy diagnosis, reaction history, health needs, safety plan, and treatment goals to determine whether OIT should be considered.
02
Day 1 escalation visit
The patient receives gradually increasing doses at approximately 15-minute intervals under direct observation, establishing the first prescribed home dose before leaving the clinic.
03
Weekly up-dose visits
Patients return for planned dose increases under direct observation. All escalation takes place in the clinic, and the care team determines when the patient is ready to advance.
04
Daily maintenance
After reaching full servings, prescribed daily home dosing continues as directed. The exact maintenance plan is individualized around the patient’s response, safety, and treatment goals.
05
Clinical reassessment
After maintenance, the care team may discuss a medically directed sustained-unresponsiveness challenge. Whether and when this clinical reassessment is appropriate is individualized.
Safety is built into every step
Safety in OIT comes from appropriate patient selection, direct supervision of every planned escalation, a consistent home routine, and instructions that patients understand. The Paris OIT Program does not treat safety as a footnote.
Every escalation is completed in the office—never at home. The Food Allergy Clinic also instructs patients to take their home dose in the early morning and to avoid exercise for at least two hours after dosing. That two-hour exercise restriction applies during build-up and maintenance because exercise can increase the potential for an allergic reaction. Patients should follow their personalized written instructions and contact the clinic with questions or changes in health.

LOCAL, IN-PERSON CARE
A maintenance goal that fits your life
OIT goals are not identical for every patient. The Paris OIT Program can discuss a custom lower maintenance dose when a patient’s goal is bite-protection rather than a higher level of dietary flexibility.
This option is part of the program’s individualized approach, not a promise of a particular outcome. During consultation, the care team will explain the possible tradeoffs, safety expectations, and what a lower or higher maintenance goal could mean in real life. The best plan is the one that is clinically appropriate and sustainable for the patient and family.

Talk through your next step
If daily dosing, in-office visits, and close follow-through feel possible for your household, a food allergy consultation can clarify whether OIT is worth pursuing.
